Saint Agur was born in the heart of Auvergne in the Monts du Velay in the Fromagerie de la Vallée de l'Ance. His secret? Its slow maturing which lasts ten weeks in cellars with very specific temperature and hygrometry. Thus Saint Agur acquires its blue and its ivory-colored paste, its fruity taste and its melting texture. It is still salted by hand today at the Beauzac cheese dairy.
